Delicate Biancomangiare
Today I'm taking you back in time with the recipe for biancomangiare , a typical Sicilian dessert (which is also made in some areas of Sardinia), which is a cross between panna cotta and pudding, soft and delicate, gluten-free, lactose-free and vegan .
Biancomangiare is a dessert that recalls the smell of goodness and family, of childhood, and the warmth of holidays. The version is delicate, designed to make life easier even for those who have difficulty with certain foods.
Ingredients :
600 g of natural almond milk
200 g of water at room temperature
200g coconut sugar
80 g corn starch
Preparation :
in a bowl add the cornstarch and water and mix gently. Add a little milk, the sugar, and finally the remaining milk, continuing to mix until the sugar is combined.
Transfer the mixture into a saucepan and cook over low heat, stirring until you get a thick cream. Mix thoroughly and remove from heat as soon as the cream begins to make the first bubbles.
Let it cool to room temperature. You can eat it as it is while it’s still hot or transfer it to a moistened cake tin and let it rest in the refrigerator for 6-8 hours.
Once thickened, the dessert will have the appearance of a pudding. You can transfer it to a plate and cut it into slices depending on the mold you used.
The recipe for blancmange can be personalized by adding orange peel, lemon peel, vanilla pod, coconut or any sweet fruit you like to the cream, keeping in mind that vanilla is the natural flavor that is best tolerated by the digestive tract.
The original recipe calls for the use of almond milk , obtained from the delicious Modica almonds, but there are also versions with whole milk.
But nothing prevents you from also using a rice and coconut milk or a rice milk already flavored with vanilla.
This dessert can also be minimized by using just two ingredients: unsweetened almond milk and corn starch.
It is excellent for children because of its delicacy, being easy to digest, to swallow and for the fact that it does not weigh down. In fact, it is a food recommended also in case of chronic intestinal pathologies, irritable colon, gastritis and ulcers .
It is also approved by the fodmap diet .
